3 c. white sugar, divided
1/2 c. hot water
1/2 c. shortening
2 3/4 c. flour
4 tsp. baking powder
1/4 tsp. salt
3 egg whites, 1/2 c. sugar
1 tsp. vanilla

Burnt Sugar Icing

16 oz. confectioners sugar
remainder of the burnt sugar syrup
1/4 c. butter, room temperature
1 tsp. vanilla
milk or water as needed

Directions:
Directions:
Put 1/2 cup sugar in heavy skilled and melt over medium low heat. Don't stir very often - will take 10 minutes or so. Add the hot water to the skillet, stir and cool.

Cream the shortening with 1 1/2 cups sugar.

Sift the flour, baking powder and salt together.Add the dry ingredients to the creamed ingredients alternately with 1 cup of the burnt sugar.

Beat 3 egg whites until stiff and add 1/2 cup sugar to them. Add the vanilla and fold the mixture into the batter.

Bake at 375º in two 8 inch round cake tins for about 20 minutes. Cool.

Burnt Sugar Icing

Combine and beat till smooth and spreadable. If your icing is too stiff because you found yourself on the low side with your remaining Burnt Sugar Syrup, add a bit of milk or water. Frost cake and decorate with pecan halves. Serve with vanilla ice cream.

Edna Brown was Clyde Brown's wife. She was an excellent baker and we always looked forward to her desserts. Her recipe did not include instructions for the icing but she definitely would have iced this cake.
