Granny's 1-2-3-4 Layer Cake Recipe

Ingredients: 1 cup butter (2 sticks) 2 cups sugar 3 cups plain sifted flour 4 eggs 2 teaspoons baking powder 1/2 teaspoon salt 1 cup milk (regular) 1 teaspoon vanilla

Directions: |
Directions:Have all ingredients at room temperature and preheat oven to 350º.
Sift the flour, salt and baking powder (Granny would sift these ingredients three times, but I just do it once.) With an electric mixer, cream butter until fluffy. Add sugar and continue to cream well (6-8 minutes). Add eggs, one at a time beating well after each addition. Turn beater to low and add flour and milk alternately to creamed mixture, beginning and ending with flour. Add vanilla and beat until just mixed. You do not want to overbeat!
Line 3-4 cake pans with wax paper. (This prevents the bottom of the layer from getting too brown.) Grease and flour pans. Divide the batter between the cake pans. Bake for 10-15 minutes. set on racks to cool for 20 minutes. Remove the layers from the pan. Frost with Chocolate or Seven-Minute Frosting...or other favorite frosting.
Makes approximately 45 cupcakes. |

Notes: This is the only layer cake recipe I have ever used. (It is really just the Basic 1-2-3-4 cake recipe.) I often wonder just how many layers of this recipe my mother made in her lifetime....probably more than I could ever imagine!
