1½ cups white sugar
½ cup water
1 Tbsp white Karo syrup
Pinch of salt
3 egg whites (or 4) - room temperature
Scant cup of white sugar
½ teaspoon vanilla
Miniature marshmallows (or marshmallow cream)

Directions:
Place sugar, water, Karo syrup and salt in heavy saucepan. Cook until sugar dissolves and it spins a thread.( 230º on a candy thermometer)

Beat egg whites until stiff and add sugar, a little at a time, and continue beating. Turn beaters from egg white setting to icing setting. Pour about one-third of syrup into egg white mixture and continue beating. Set saucepan back on LOW setting and heat. Slowly add another one-third syrup into egg white mixture, still beating. Be careful not to let srup took too much (low heat!).

Before adding last one-third of the syrup, add a handful of marshmallows to frosting mixture and ½ teaspoon vanilla. Continue beating until spreading consistency (will form peaks). Usually takes about 7 minutes from start to finish.

Note: Do not attempt this frosting recipe on a cloudy day! This is a "tricky" recipe and takes practice. After many years of making this frosting, it sometimes fails!

This is my mother's recipe that I always use for birthday cakes, often adding a color to the frosting for different occasions. This is my frosting recipe for a coconut cake, as well. I just add grated coconut between the layers and on top. I use Mother's 1-2-3-4 layer cake recipe for my cake. This frosting is great for cupcakes!
