1 Medium Chicken Breast Diced
1 Small Chicken Thigh Diced
1/2 Large sweet onion Diced (4.5 oz)
1 Small Zucchini Dices (6.5 oz)
2 Cups Fresh Spinach Leaves
1/2 Cup Heavy Cream
4 oz Shredded Gruyere Cheese
2 T Ghee
1 Extra Large Egg
1/8 t Caldo De Polo Chicken Bouillon
1/4 t Garlic Powder

Directions:
Directions:
1. Saute onion in the ghee until translucent
2. Add zucchini and continue cooking until softened
3. Add spinach and stir until it wilts
4. Add garlic powder and bouillon and stir to combine
5. Add the diced chicken, and stir until warmed through
6. Take off heat and let cool
7. In a mixing bowl, combine egg, cream and 3 oz of the Gruyere and mix until thoroughly combined
8. Spray an 8 x 8 inch square casserole dish with olive oil spray
9. Add the chicken & vegetable mixture to the casserole
10. Pour egg, cream and cheese mixture over the chicken
11. Sprinkle the remaining cheese on top
12. Bake in a preheated @ 350° F oven for 17 minutes or until lightly browned on top
13. Let casserole cool about 10 minutes before serving
