2½ cups flour
1 tsp. baking powder
½ tsp. baking soda
¼ tsp. salt
1 cup butter, softened
1 cup white sugar
2 eggs
1½ tsp. vanilla
¾ cup chopped pistachios
¾ cup dried cranberries

Directions:
Directions:

Combine flour, baking powder, baking soda, and salt.
In a large bowl, cream butter, sugar, eggs, and vanilla thoroughly.
Add dry ingredients gradually, mixing until smooth.
Stir in nuts and cranberries.
Shape dough into two rolls, about 1½” in diameter.
Wrap rolls in waxed paper or plastic wrap, and refrigerate overnight.

When ready to bake, preheat oven to 375º.
Cut roll into ¼” slices. Place on ungreased cookie sheet.
Bake for 8-12 minutes until lightly golden.
Let cool on cookie sheet for 5 minutes, then transfer to rack and cool completely.


Rolls can be stored in refrigerator for 3 months, or in freezer for 6 months.

Variation: use any combination of your favourite dried fruit and nuts (raisins, walnuts, etc.).
