3 eggs
2 cups of sugar
1 cup oil
2-3 cups unpeeled zucchini
3 cups flour
1 tsp soda
1 tsp salt
2 tsp cinnamon
1/2 tsp baking powder
3 tsp vanilla
1/4 tsp baking powder
1 cup chopped nuts

Directions:
Directions:
Best eggs until fluffy, add sugar, oil, zucchini and vanilla.
Mix well, add nuts.
Grease 2 loaf pans or 1 bunds Pan
Bake 350º for 50 min

(Decrease nuts to 1/2 ro add 1/2 cup raisens. Omit cinnamon and add 1 cup flaked coconut)
