Dough
4 Eggs
1 Tsp salt
1 Cup Flour
1 Cup milk plus 3 T.

Filling:
2 lbs dry cottage cheese
⅓ Cup sugar
4 eggs
¾ Tsp salt

Mix together in mixer

Method for Dough:
Beat eggs and gradually add flour, salt and milk. Heat & grease small skillet.

Pour enough batter to make a very thin pancake... tipping pan from side to side to cover bottom.

Pour off excess batter.

When done, place on clean towel with brown side up.

Place spoonful of filling into center of each pancake and fold over to make square.

Top each Blintz with butter and bake in 375º oven until brown.
