2 large artichokes, rinsed well, top third cut off, and leaf tips trimmed, stems cut to 1 1/2" and peeled with vegetable peeler
1/8 c. salt
1 lemon, cut in half
1/2 c. olive oil
scant 1/4 c. balsamic vinegar
1/2 T. chopped garlic (minced)
1/2 - 1 T. chopped Italian parsley (I like more than less)
1/4 t. salt
1/8 t. freshly ground black pepper
2 oz. herbed goat cheese, crumbled
Flaked sea salt
Garlic Parmesan aioli for dipping OR Debbie's Green Dip

For artichokes:
Fill a large pot 3/4 full with water. Add 1/8 c. salt and bring to a boil. Trim the artichokes as outlined in the ingredient. Rub the cut sides and bottoms of the artichokes with lemon and carefully add them to the boiling water. Weight the artichokes as necessary with a heavy dish or bowl, and simmer, partially covered, until the bottoms are just tender and can be pierced with sharp knife and an outer leaf pulls out easily, about 15 - 30 minutes. Drain the artichokes upside down in a colander until cool enough to handle.

Cut the artichokes into quarters and discard the prickly purple leaves and hairy choke.

In a bowl, combine the olive oil, vinegar, garlic, parsley, salt and pepper. Add the artichoke quarters and toss to coat. Let marinate for 2 to 4 hours, turning occasionally.

Preheat the grill to medium-high.

Remove the artichokes from the marinade and grill, turning, until warmed through and lightly charred around the edges, about 5 minutes. Place on a platter and top with the crumbled cheese and flaked sea salt. Serve with desired dipping sauce.


For Garlic Parmesan dip:
Ingredients: mayonnaise (I use light), grated parmesan cheese, fresh lemon juice, minced garlic, freshly ground black pepper

Directions: Mix all together to a nice thick dipping consistency. I don't have specific measurements, but I use about 1/2 c. mayo, 1/ 4 c. Parmesan, 1/2 lemon, 1 clove garlic, pepper to taste. These are estimates and you can adjust easily to taste and to the amount you want to make.


For Debbie's Green Dip:
Ingredients: 1 jar green dip, 16 oz. light sour cream, 1 packet Ranch dressing powder.

Directions: Mix all well. That's it - delicious!
