EVEN A SUPER QUICK MINI-BRINE makes a huge difference in the moisture of the pork!
Get a large pot and pour in 1/4 cup sugar, 3/4 cup salt, some spices and add 2-3 cups of boiling water and stir until salt is dissolved. Add a couple of cups of ice cubes to cool down the mixture.
Add your pork, and then enough water to make sure the meat is covered.
Let sit in the cold salty water for at least 15 minutes, but preferably an hour. (Up to 24 hours, but in the fridge.) Rinse, pat dry, and proceed to recipe gloriousness.
