Rack of Ribs or can also be used on pork tenderloin

For the Dry Rub:

1 tbsp of garlic powder
2 tbsp of black pepper
1 tbsp of salt
1 tbsp of mustard powder
1 tbsp of chili powder
1 tbsp of ground cumin
1 tbsp of packed brown sugar
2 tbsp paprika
1/2 tsp of oregano

For Blackberry Sauce:
1/2 cup of blackberry preserves
1 and 1/2 cup of ketchup
1/8 cup of brown sugar
1 tbsp of Louisiana cane syrup
1/8 tsp cayenne pepper
1/4 tsp of mustard powder
2 tbsp of red wine vinegar
1/2 cup of fresh blackberries

In small mixing bowl, combine all seasonings. Sprinkle the meat and rub in the spices.
Let the rubbed meat sit in the fridge for one hour.

In a smoker, smoke the meat for 3 and 1/2 hours on low heat (220-225 degreesF) with applewood as the smoke.

Take out the meat and rub the sauce all over the meat and you can either place back in naked for another 30-45 minutes or place back in covered with aluminum foil depending on your preference.

Take out meat, slice and serve hot.
