Ingredients: Rack of Ribs or can also be used on pork tenderloin
For the Dry Rub:
1 tbsp of garlic powder 2 tbsp of black pepper 1 tbsp of salt 1 tbsp of mustard powder 1 tbsp of chili powder 1 tbsp of ground cumin 1 tbsp of packed brown sugar 2 tbsp paprika 1/2 tsp of oregano
For Blackberry Sauce: 1/2 cup of blackberry preserves 1 and 1/2 cup of ketchup 1/8 cup of brown sugar 1 tbsp of Louisiana cane syrup 1/8 tsp cayenne pepper 1/4 tsp of mustard powder 2 tbsp of red wine vinegar 1/2 cup of fresh blackberries

Directions:In small mixing bowl, combine all seasonings. Sprinkle the meat and rub in the spices. Let the rubbed meat sit in the fridge for one hour.
In a smoker, smoke the meat for 3 and 1/2 hours on low heat (220-225 degreesF) with applewood as the smoke.
Take out the meat and rub the sauce all over the meat and you can either place back in naked for another 30-45 minutes or place back in covered with aluminum foil depending on your preference.
Take out meat, slice and serve hot. |
