Italian seasoning
Black pepper
12 toes of garlic
1 yellow or white onion
2 beef bullion cubes
2 cups of hot water
Salt (to taste)

Directions:
Directions:
Rub roast with Italian seasoning and black pepper
Stuff roast with a dozen toes of garlic
Sear roast at 450 degrees for 30 min in oven for 30 minutes
Pull roast out of oven and add 2 cups of hot water with 2 bullion cubes already melted.
Cover roast with aluminum foil and bake at 350 degrees til tender for about 3 hrs

*to make thicker gravy, brown 3 tbs of flour in iron skillet with water from roast. Season with salt and add back to roast pan.

My gram liked to use a sirloin roast rather than a chuck roast
