3/4 C soft shortening (at least 1/2 butter)
1 C brown sugar, packed
1 3/4 C sifted all purpose flour
1/2 t. baking soda
1 t. salt
1 1/2 C quick cooking oats

Date filling
2 C pitted chopped dates
2/3 C sugar
1/2 t. salt
2/3 C water
1 t. lemon juice
1 t. grated lemon rind
2 Tablespoons butter

Preheat oven to 400º

Date Filling - Combine all ingredients and cook over low heat, stirring frequently, until slightly thickened, about 10-15 minutes. Cool.

Cream shortening and sugar together.

Sift flour, soda and salt together and add to creamed mixture. Add oats and mix until well blended.

Turn half of mixture into greased 9 x 13-inch pan. Press and flatten with fingers to cover bottom.

Spread with Date Filling. Cover with remaining crumb mixture.

Bake in hot oven for 5-30 minutes. Do not overbake.

Cool and cut into small bars. Roll in powered sugar.
