3 c. sugar
2 ½ tsp. baking soda
1 ½ tsp. baking powder
2 ½ tsp. cinnamon
1 ½ c. chopped pecans
6 eggs
¾ c. vegetable oil
¾ c. milk
½ T. vanilla
1 pound grated carrots

Directions:

Preheat oven to 350º. Grease and flour a bundt pan. Combine flour, sugar, baking soda, baking powder, cinnamon, and pecans. Beat together wet ingredients until combined well. Stir in shredded carrots. Add dry ingredients to wet until just combined. Pour into prepared pan and bake on middle rack for 90 minutes or until tester comes out clean. Allow to cool for 15 minutes before removing from pan.
