Step 1:
1 c. diced ham or canadian bacon
1/4 c. chopped green onion
2 T. butter

Step 2:
16-18 eggs, lightly beaten
Scrambled until almost set

Step 3:
4 T. butter
2 1/4 c. croutons
1/8 tsp. paprika

Step 4:
Cheese Sauce
2 T. butter, melted
2 T. flour
1/2 tsp. salt
1/8 tsp. pepper
2 c. milk
1 c. American Cheese, shredded

Directions:
Directions:
In a large pan mix ham, onion and melted butter until almost browned. Add in scrambled eggs.

Pour into large, greased glass baking dish.

Make cheese suace by blending melted butter with flour, salt, and pepper. Add milk and stir until bubbly and slightly thickened. Now add cheese and blend in over low heat. Stir until cheese melts.

Fold the ham and egg mixture into cheese sauce.

Sprinkle the crouton mixture on top and chill over night.

Bake uncovered, 350º for 35-40 minutes.
