Ingredients: 1 ¼ C all-purpose flour 3 Tbsp. sugar 1 ½ tsp. baking soda ½ tsp. salt 1 ½ C buttermilk 1 large egg 2 Tbsp. melted butter

Directions: |
Directions:Combine the flour with the sugar, baking soda, and salt in a large bowl.
Add the buttermilk, egg, and melted butter and mix on high speed with an electric mixer for 1 minute or until the batter is smooth. Let the batter sit for 5 minutes before using it.
Preheat a large nonstick skillet or griddle over medium heat.
Pour ⅓ cup portions of batter onto the hot pan or griddle. Cook the pancakes for 1 ½ - 2 minutes per side until golden brown. Serve hot with butter and maple syrup. |

Notes: Buttermilk Substitution: Add 1 1/2 tsp. of vinegar to 1/2 C of milk for every 1/2 C of buttermilk you need. Stir and let it sit a few minutes to 'sour'.
