5 cups zucchini, diced in pieces
1/4 cup onion, chopped
1 can (10 3/4 oz.) cream of chicken soup
1 8 oz. carton dairy sour cream
2 cups chopped cooked chicken
1/4 tsp pepper
3/4 cup butter
1 6 oz. package stuffing mix

Directions:
Directions:
Cook zucchini and onion in glass 3 qt. casserole, covered on full power 6 -10 minutes.
Pour off excess juice from cooked zucchini, and add soup, sour cream, chicken and pepper. Mix well.
Place butter in 2 qt. glass utility dish and cook on full power for 1 minute or until butter melts. Add stuffing mix to butter and mix well. Reserve 1 cup stuffing mixture for topping. Spread remaining stuffing over the bottom of dish and spoon zucchini mixture over stuffing. Sprinkle reserved topping evenly over mixture. Heat on full power for 8-10 minutes, or until heated through.
