1 stick butter
1 bunch green onions, chopped
1/2 cup chopped parsley
2 T. flour
1 pint Half and Half
1/2 lb. Swiss cheese, grated
2 T. sherry
1 lb. crawfish tails
salt and red pepper to taste

Directions:
Directions:
Melt butter. Saute onions and parsely. Blend in flour, cream, and cheese until melted. Add other ingredients and simmer until done. Serve in patty shells. May also be used as dip.
