Ingredients: 8 egg yolks (I always cooked the whites up for Buddy as a treat) 1 cup sugar 1/4 cup milk 2 cups heavy whipping cream 8 oz. Neufachatel cheese* 8 oz. ricotta cheese* 2 cups brewed and cooled hazelnut coffee (strong) 1/4 cup Amaretto approx. 50 Lady Fingers (find in the Italian food aisle @ Giant Eagle) 2-1/2 oz grated dark chocolate cocoa powder for dusting
* I use 16 0z. Mascarpone cheese instead

Directions:1. Whisk egg yolks, 1/2 the sugar and milk in a 2-quart saucepan until smooth and blended. Heat to a boil over medium heat, stirring constantly. Refrigerate and completely cool. 2. Whip the whipping cream to very stiff peaks and set aside in refrigerator. 3. Mix cheese(s) together with remaining sugar. Stir in cooled yolk mixture; fold in whipping cream. 4. Combine Amaretto and coffee in a bowl. Quickly dip each lady finger in the coffee mixture and layer on the bottom of a 9x13" baking dish. Sprinkle with 1/2 of the shaved chocolate. Cover with 1/2 of cheese mixture. 5. Repeat step 4; dust this layer with cocoa powder. Refrigerate over night for best favor. |

Notes: Rebekah's favorite birthday dessert. Like the Black Forest Cake, using good Amaretto really accents the flavors of this. Also the consistency of the Mascarpone is so much better than the ricotta and Neufachatel cheeses.
