1 cup butter
1/2 cup sugar
3 Tbsp lemon juice
1 tsp grated lemon peel (or 1/8 tsp lemon extract)
1/2 tsp vanilla extract
2 cups flour
4 1/2 tsp fresh rosemary, minced
1/4 tsp salt

Directions:
Directions:
Preheat oven to 350 degrees.

Cream butter and sugar until fluffy.
Add lemon juice, lemon peel (or extract), and vanilla.
Incorporate flour, rosemary and salt.

Form dough into two 12-inch rolls. Wrap in plastic wrap and freeze for 30 minutes.
Unwrap and slice frozen dough into 1/4-inch thick circles.

Bake on ungreased cookie sheet for 8-10 minutes or until edges are golden brown.
