1 package boneless, skinless chicken breast
1 cup flour
1 cup cornstarch
soy sauce
3 egg whites
Olive Oil

Assorted vegetables as desired - sauté mushrooms, broccoli, snow peas, water chestnuts, baby corn, thin sliced carrots, etc. Hokan Chinese Noodles -- Sriracha sauce or other sauces as desired

Cut the chicken into 1 inch pieces (ie chicken nugget size) & place them into a large ziplock.
Mix 3/4 cup soy sauce with 3 egg whites & pour over chicken.
Refrigerate for a couple hours or longer.
In large bowl mix the flour and cornstarch together.

In large pan heat a generous amount of olive oil over medium (I use my cast iron skillet for this and fill about 1/3 inch high with oil and sometimes add more when cooking).

Dredge the chicken pieces in the flour mixture, tossing to coat all sides & add meat to the oil.

Stir fry the meat until crispy and done (about 25 minutes to get crispy and cooked through) - toss/flip the chicken occasionally to crisp all sides. Don't over toss.

Meanwhile, boil the noodles with a little olive oil in the water to avoid sticking. Drain the noodles and add them to a large pasta bowl.

Add the cooked chicken on top of the noodles. Add vegetables and soy/sriracha or other sauces as desired.

Half the time we just skip the vegetables or do a bag of frozen stir fry veggies on the side. We all like it plain with just the noodles and chicken as well.
