1/3 c spicy brown mustard
2 T brown sugar
3 T maple syrup
2 T yellow mustard
1 T grated onion
1 T apple cider vinegar
2 t low-sodium soy sauce
½ t black pepper
1 minced garlic clove
8 bone-in chicken thighs, skinned
¼ t salt
Cooking spray

Directions:
Directions:
• Combine the first 9 ingredients.
• Place half of the mixture in a zip-lock plastic bag; reserve the remaining mixture.
• Add chicken to the bag; seal.
• Chill for 2 hours.
• Preheat the grill to medium-high heat.
• Remove the chicken from the bag and sprinkle with salt.
• Place chicken on a grill rack coated with cooking spray; grill 8 minutes on each side or until done.
• Serve with reserved mustard mixture.


I’ve also made this recipe using boneless, skinless thighs. I bake them in the oven at 450° for 45 minutes.
