2/3 c cocoa
3 C sugar
1/8 t salt
1½ C milk
¼ C butter
1 t vanilla

Directions:
Directions:
Combine cocoa, sugar and salt in a large saucepan. Add milk gradually, mix thoroughly, bring to a bubbly boil on high heat stirring constantly. reduce heat to medium and continue to boil the mixture without stirring until a small amount of mixture forms a soft ball when dropped into cold water. Remove saucepan from heat. Add butter and vanilla. Do not stir. Set sauce pan in cold water to hasten cooling. Cool to 110º. Beat by hand or with a portable electric mixer until the fudge thickens and loses some of its gloss. Quickly pour and spread fudge in lightly buttered pan. Cool. Cut into squares.
