1 1/2 cup all purpose flour
1 tsp. soda
1 tsp. salt
1 tsp. vanilla
1 cup soft shortening (some butter)
1 cup brown sugar
1 cup granulated sugar
2 eggs
3 cups quick cooking oatmeal
1/2 cup chopped pecans
3/4 cup coconut

Directions:
Directions:
Sift flour, soda and salt.
Cream shortening and sugars light and fluffy.
Add eggs, beat well.
Gradually blend in flour mix and oatmeal.
Add pecans and coconut.
Shape dough into 3 rolls, 2 inches in diameter.
Wrap in wax paper and chill 24 hours.
Heat oven to 375º F., slice dough 1/4 inch, and bake 10 minutes.


In Grandma Anna's handwriting--Ione just sets dough in refrigerator in mixing bowl. Chill 24 hours, shape into balls and press pecan half on each. She sometimes separates dough, adds pecans to 1 part, coconut to another and chocolate chips to another. This receipt will yield 100 cookies.
