1 1/2 c. sugar
3 T. flour
1/2 t. nutmeg
1 T. butter
3 well beaten eggs
3 c. cut rhubarb
1 recipe plain pastry

Directions:
Directions:
Blend sugar, flour, nutmeg and butter.
Add eggs and beat smooth.
Pour over rhubarb in a 9-inch pastry lined pan.
Can top with pastry cut into selected shapes.
Bake in a hot (450 deg) oven for 10 minutes.
Lower over to 350 deg and bake an additional 45 to 60 minutes.

Mom loved rhubarb pie. I occasionally made this for Mother's Day. One Mother's Day dinner was at my house. I doubled the recipe and then doubled the sugar again by mistake. The extra sugar was laying quietly on the bottom of the pie. It didn't even melt.
