Bacon Grease

Pour a few cups of Corn Meal in bowl, add half as much flour and stir together. Add eggs and buttermilk and mix until still kind of thick. After it is mixed up add at least ¼ cup bacon grease and stir in. If you don't have it you can use vegetable oil. Pour into greased iron skillet and put in 425º oven for about 15 or 20 minutes. It's usually done when the top begins to brown. Mom used to put it under the broiler to get it browner but I don't.

Mom always made water corn bread when she made beans and spread it thin in a pan so it would be crispy. She only used SR corn meal mix and water. If you like buttermilk cornbread but want the bottom crisp just heat the skillet in the oven until hot before you pour the batter in. If you don't have buttermilk add a little vinegar or lemon juice to your milk and let it set around 5 minutes.
