"A man who was fond of wine was offered some grapes at dessert after dinner. "Much obliged," said he, pushing the plate aside; "I am not accustomed to take my wine in pills."--Jean Antheleme Brillat-Savarin, The Physiology of Taste

Ingredients:
1 lb.dried Pinto Beans
about 1/2 lb. Bacon
salt....and lots of water!!

Directions:
Directions:
Clean the beans in water and pick out dirt and debris. Soak beans over night and pour water off. If you don't have time for that just cover with water, bring to a boil and pour that water off. Choose a kettle with plenty of room. Put more water on beans (lots of it) and bring to a boil. Turn heat to medium and continue cooking. When water boils down add more. It's good to keep a kettle of hot water on stove to use. Sbout an hour into cooking add salt. Be sure to taste for salt at least an hour before it should be done so you can add if needed. Cook 2 to 4 hours, depending on how thick you want the juice. Now it's time to eat!

A few tips!! Mom never did this but I have...you can add maybe 1/4 lb of navy beans to extend servings or for something different.
If you put too much salt in, add a small potato to use up excess salt. Cook until done then discard the potato.
