Cream Cheese Frosting


Ingredients:

2 cups flour (I always use whole wheat)
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. salt
3 eggs
1-1/2 cups sugar
3/4 cup mayo (I use applesauce instead when available)
1-8oz. can crushed pineapple in its own juice, undrained
2 cups shredded carrots
3/4 cup chopped walnuts (optional)

Preheat oven to 350º. Grease and flour 2-9" cake pans or one 9x13" pan. set aside. Stir together 1st 5 ingredients. In another bowl beat next 4 ingredients until blended. Gradually add dry ingredients until well mixed. Stir in carrots and walnuts. Bake 30-35 minutes for 9" cake pans or 40-45 minutes for 9x13" pan.

Cool, remove from pan (s). Frost while still warm.

Frosting: Cream together 8 oz. softened cream cheese, 1 stick butter, 1 tsp. vanilla. Slowly add 2 cups powdered sugar and beat until smooth.

I cannot even tell you where I got this recipe. I found it in a recipe book your Aunt Mary Beth had. Of course I tweaked it. I don't use the cream cheese frosting but instead use the birthday cake icing. I think both are good, but there are cream cheese frosting haters in every family.
