4 to 5 Roasted Green Chile's (Prefer Big Jims)
1/4 Cup Vegetable Oil
2 Pounds Pork Shoulder, Cut into 1" Chunks
Kosher Salt & Ground Pepper (To Taste)
1 Teaspoon Whole Cumin Seeds
1 Medium Yellow Onion, Diced
1/2 Cup Finely Chopped Cilantro
6 Cloves Garlic, Minced
1 Tablespoon All-Purpose Flour
1 16 Ounce can Crushed Tomatillos
4 Cups Chicken Stock

Directions:

Add the oil to a pre-heated pan (Cast Iron) on high heat. Brown the pork and sprinkle with salt and pepper. Add the cumin and cook until golden brown all over. Stir as needed. Add the pork into a slow cooker or crock pot and set aside. Lower the heat on the pan to medium and add the green chiles, onions, cilantro and garlic to the pan. Sprinkle with salt & pepper. Saute the vegetables, scraping any brown bits from the bottom of the pan, until the onions are soft and golden, about 10 minutes. Stir in the flour and cook until the flower absorbs the excess liquid and is cooked through. Add the tomatillos, chicken stock and Green Chile/Onions to the slow cooker or crock pot, cook on high until the pork is tender, about 45 minutes, turn down the heat and let simmer and flavors concentrate for 15 minutes.

Serve with tortilla chips, or over rice. Your choices are endless!
