Rind of one large watermelon. Peel & remove all green & pink portions from the watermelon rind. Cut in one inch cubes & soak overnight in salt water ( 4 tablespoons salt to 1 uart water) Drain, cover with fresh water to cook until almost tender.
Drain the watermelon
Make a syrup
4 cups sugar
2 cups vinegar
4 tsp whole cloves--------------------tie spices in cheesecloth bag
8 sticks cinnamon
a little mustard seed
Heat the syrup & spices to boiling and allow to set for 15 minutes.
Add watermelon rind and cook until clear and transparent.

Pack boiling hot into sterilized jars and seal at once.
