Use Lotties recipe for dumplings. This is how my Mom made the chicken for it. Cover a fresh chicken with water and boil until tender. Season the water with onion, celery and salt. When tender, take chicken out and remove meat from bones. Strain the broth. Season broth to taste with salt. Bring broth to a boil and add the dumplings one at a time. Cover and simmer for ten minutes or until dumplings are tender. Add chicken to the dumplings and broth.

Family Memories from Susan: When I was growing up, my mom, Sylvia, made Aunt Lotties chicken and dumplings for me when ever I was sick or celebrating a special occasion. Needless to say, I had it alot and then couldn't control how much I ate. I overdosed. There were a few years that I couldn't hear the name "chicken and dumplings" without feeling stuffed and shaking my head "no". Now I am back to craving it again and look forward to the way it fills up the house with a smell full of wonderful memories.
