1/2 cup unsalted butter – softened
1 cup +1 tablespoon flour
1/4 cup powdered sugar
2 tablespoons fresh lemon juice
grated rind of one lemon
two large eggs – lightly beaten
1/2 teaspoon baking powder
1 cup sugar

Directions:
Directions:
Preheat oven to 350°.
Cream butter, 1 cup flour and powdered sugar in a large bowl.
Press into 9 in.² baking pan.
Bake 15 minutes.
Whisk together lemon juice, rind, eggs, baking powder, remaining flour and sugar.
Pour over crust and bake 25 minutes.
Cool in pan.
Cut into squares.
Serve on paper baking cups if desired.
