1 chicken
3-4 T flour
2 chopped onions
½ chopped green pepper
¼ C parsley
½ tsp garlic puree
salt
pepper
2 quarts of water

Directions:
Directions:
Brown pieces of chicken in a small amount of oil and set them aside.
Add 3-4 T of flour and stir till brown (roux).
Add and cook (always stirring) till clear, the onions, green pepper, parsley and garlic puree. Salt and pepper are added to taste. SLOWLY add 2 quarts of water. Add chicken, cover and simmer for 45 minutes to an hour.

Kitchen Bouquet or soy sauce can do wonders for a pale stew.

Serve with mashed potatoes, rice, or over biscuits.
