Cake:
2 cups white sugar
2 cups flour
2 tsp. baking soda
1 tsp. salt
3 tsp. cinnamon
1½ cups vegetable oil
4 eggs
3 cups grated carrots
1 cup chopped walnuts
1 tsp. vanilla
Cream Cheese Icing:
½ cup soft butter
1, 8 oz. package soft cream cheese
1 tsp. vanilla
1 lb. box icing sugar

Directions:
Directions:
Cake: Mix sugar, flour, baking soda, salt and cinnamon. Stir in oil and add eggs one at a time. Mix well. Pour into a greased and floured 9" x 13" pan. Bake at 350º until done (approximately 1 hour and 15 minutes). Cool in pan.
Icing: Combine butter, cheese and vanilla. Mix well. Gradually add sugar; beat until smooth. Spread over cake.
