4 eggs, beaten
1 3/4 cups sugar
1/2 cup whole milk
1 (12 ounce) can evaporated milk
1/2 cup flour
1/2 stick butter
2 teaspoons vanilla
1/2 teaspoon cinnamon
1/2 teaspoon allspice
2 cups cooked sweet potato, peeled and mashed
3 1/2 oz. coconut

Directions:
Directions:
Preheat oven to 350ºF. Grease two 9-inch pie pans.

Whisk together the sugar, flour, and spices until well blended.

Beat in the melted butter, milk, eggs, sweet potatoes, and vanilla until smooth. Fold in coconut.
Pour into prepared pie pans and bake for about 45 minutes or until browned and just slightly soft in the center.

Cool completely before slicing.

Store in refrigerator.
