¼ cup butter
¾ cup brown sugar
1 egg
⅔ cups flour
1 tsp. baking powder
pinch of salt
¼ cup walnuts
1 tsp. vanilla
¼ cup coconut

Directions:
Directions:
Cream butter and brown sugar together. Beat in 1 egg. In separate bowl, mix flour, baking powder and salt together. Then mix in the walnuts, vanilla and coconut. Mix this with the butter, brown sugar and egg mixture. Pour into a 9" x 9" pan and bake at 350º for 15 - 20 minutes. Ice with a mix of already blended icing sugar, milk and tsp. of butter when cake is hot.

My Mom had a friend, Amy, when she was growing up who created this recipe and ended up owning her own restaurant. They are more like brownie squares than cake and are nice and chewy.
