2 medium onions- thinly sliced
4 medium garlic cloves- thinly slices
1 cup chicken stock or broth
1TBSP packed dark brown sugar
1TBSP chili powder
1 TBSP kosher salt or more as needed
1/2 tsp. ground cumin
1/4 tsp. ground cinnamon
4.5-5 pound boneless or bone-in pork roast

In a bowl mix the dry ingredients and rub it all over the pork roast really well.

In the crock pot put the chicken stock then layer the sliced onions and garlic on the bottom, lay the pork roast on top of the onions and garlic. Cook the roast until it is fully cooked and is shreds easy (falls apart) easily. It should cook most of the day, basting some after it has cooked for awhile but this isn't necessary.
When it is cooked, drain part of the liquid off (keeping it) shed meat really fine in the remaining juice, onions and garlic, mix well.
When you serve it on a bun you can put the remaining juice on it or a BBQ sauce (or both)
Serving coleslaw with it is really good!
