1 cup sugar
1/3 cup butter softened
2 eggs
1 1/2 cup mashed ripe bananas (about 3-4 medium)
1/3 cup water
1 2/3 cup white flour
1 tsp baking soda
1/2 tsp salt
1/4 tsp baking powder
1/2 cup chopped nuts (optional)

Directions:
Directions:
Heat oven to 350 degrees. Grease bottom only of loaf pan.

Mix sugar and butter in large bowl. Stir in eggs until blended. Add bananas and water; beat 30 seconds. Stir in remaining ingredients except nuts if using just until moistened. Stir in nuts if using. Pour into pan.

Bake until wooden pick inserted in center comes out clean. 8 inch loan pan 1/14 hours, 9 inch loaf pan 55-60 minutes. Cool five minutes NOTE: these are the directions from the cookbook but I've never baked mine this long.......go with 45 minutes and test, can always add more time if needed.

Loosen sides of loaf from pan, remove from pan. Cool completely before slicing 1 loaf 24 slices 120 calories per slice.

NOTE: I have never gotten 24 slices out of a loaf of banana bread. :-)
