1 cup shortening
2 cups sugar
2 eggs
1½ tsp. vanilla
1 cup buttermilk
4 cups all-purpose flour
4½ tsp. baking powder
1 tsp. baking soda
½ tsp. salt
favourite jam or jelly

Directions:
Directions:
Cream shortening and sugar together. Add eggs, vanilla and beat well. Mix flour, baking powder, baking soda, and salt in a separate bowl. Stir flour mixture alternately with the buttermilk into the creamed mixture until it forms a soft ball. *Add extra flour if necessary. Cover and chill in fridge for about 1 hour. Roll out on floured surface to about ¼" thick. Cut into circles (you can use the top of a drinking glass) or desired shape and place on cookie sheet. Put a hole (about the size of the lid on vanilla) in the centre of half of the cookies. Bake at 375º for about 9 minutes. When cool, spread your favourite jam or jelly to the flat cookies and and top with cookies with hole in tops. These will be like a sandwich.
