2 lbs. corned beef, shredded
12 cabbage leaves (from 1 head of boiled or microwaved cabbage)
1½ c. Bavarian sauerkraut, well drained
12 slices swiss cheese
1 c. Thousand Island salad dressing

This can be made with leftover corned beef or also from deli or even good quality canned corned beef.

To prepare the cabbage, rinse the head then place (whole) in the microwave for 6 to 8 minutes. Remove and allow to cool until you can easily handle it. Remove the core and peel off a dozen large leaves.

Fill each leaf with a slice of cheese, 1/4 c. corned beef, 2 T. sauerkraut, and 1 T. dressing. Roll up burrito style. Place seam side down in a steamer and steam for 8 minutes. Serve with additional dressing for dipping.

If you don't have a steamer you can lay them in a 9 x 13 in. baking pan, add about a cup of water or beef broth, cover and bake in a preheated 400º oven for about 15 to 20 minutes.
