1 egg
1/2 cup skim milk
1 tsp Dijon-style mustard
1/4 tsp salt
1/4 tsp pepper
1/2 cup flour
2 cups corn flake crumbs, place in shallow bowl
1½ lbs boneless chicken breasts, cut into 1½x1 inch pieces
1½ tbsp margarine, melted
Honey-mustard sauce

Directions:
Directions:
Whisk together first 4 ingredients in small bowl.
Add flour to above.
Dip chicken oieces in egg mixture, then corn flake crumbs to coat completely.
Place on ungreased baking dish.
Lightly brush chicken with melted margarine.
Bake at 350°F for 20 minutes or until done, coating is crispy.
Serve with Honey Mustard dressing and lightly cooked broccoli florets, if desired.
