5 peaches, peeled and sliced
1 unbaked, 9" pie shell
¾ cup sugar
2 tbsp. flour
1 tsp. cinnamon
2 tbsp. butter
2 eggs, well beaten
pinch of salt
1 tsp. vanilla

Directions:
Directions:
Place peach slices in pie shell. Combine sugar, flour, and cinnamon; cut in butter until mixture is crumbly. Spoon evenly over peaches in pie shell.
Combine eggs, salt and vanilla; pour evenly over topping. Bake at 400º F for 15 minutes, reduce heat to 325º F and continue baking for 40 minutes or until set and browned. Cool. Makes one 9" pie.
