1 cup butter
2 cups sugar
3 cups applesauce
2 tsp. baking soda
5 cups flour
2 tsp. cinnamon
½ tsp. salt
1 cup each raisins and chopped walnuts

Directions:
Mix applesauce & baking soda & let sit for 10 minutes. Meanwhile, mix butter & sugar together until well combined. Add applesauce (with baking soda already mixed in). Add remaining ingredients & drop by rounded teaspoonful onto baking sheet. Cook for 15 min. at 350º.

The cookies have a cake-like consistency & the house smells delicious when they're baking. I got this recipe from the nursing home where I worked.
