6 oz fresh snap peas, cleaned (anoit 1⅓ cups)
1 tbsp water
1 beaten egg
1 cup herb-seasoned stuffing mix
1 medium carrot, shredded
2 tbsp margarine or butter, melted
4 turkey breasrs tenderloin steaks (1 lb total)
1/2 of a 12 oz jar (2/3 cup) turkey gravy
(12 oz jar Heinz Home Style Roasted Turkey Gravy)
(Need more gravy than this, use 2 jars)
2 tsp snipped parsley (increase this)
1/4 to 1/2 tsp finely shredded lemon peel (increase this)

In 8x8x2 microwave safe dish, Combine snap peas & water, cover with vented plastic wrap.
Microwave at 100% power, 2 to 3 minutes (low wattage microwaves, 3 to 4 minutes) or until almost tender.
Drain snap peas and set aside.
In small mixing bowl, combine beaten eggs, stuffing mix, carrots & melted margarine.
Assemble rolls:
Lay turkey steaks flat.
Place 1/4 snap peas atop each each turkey steak toward wide end.
Top each with 1/4 cup of the stuffing mix, placing it on the snap peas.
Carefully fold the empty end of turkey steak over the stuffing & fasten to the other end with a wooden toothpick.
Place it in same microwave safe dish used for peas, Cover with vented wrap.
Cook on high for 6 to 8 minutes (low wattage for 8 to 10 minutes) or until turkey is tender and no longer pink.
Turn and rearrange turkey roll ups after 4 minutes (I didn't do this - autp rotate).
In a 2 cup measure, combine gravy, parsley & lemon peel.
Cook uncovered 2 to 3 minutes or until heated through, stirring once.
Will need to use larger micro-dish for gravy if making more gravy.
