1 c butter, room temperature
1/2 c sugar
1 lemon, zested and juiced
2 c flour, spooned lightly into measuring cups and leveled with a knife
1/2 c strawberry jam

Glaze:
1 1/3 c powdered sugar
5-6 tsp lemon juice
1-2 drops yellow food coloring (optional)

Preheat oven to 350

Cream butter and sugar for about 1 min. Add lemon zest (about 1 Tbs) and mix to combine. Slowly add flour and mix to combine scraping sides of bowl occasionally.

Roll dough into 1-inch balls (1/2 Tbs dough) Place on ungreased baking sheet. Use your pinkie finger to make and indentation in the center of each cookie and fill with about 1/4 tsp jam. (a baby spoon works great!)

Bake 9-11 minutes or until just set.

Cook 3-4 minutes on pan before transferring to cooling rack.

When cookies are completely cool, drizzle with glaze
