Ingredients:
Ingredients:
30 corn husks
1 lb. ground beef
1 lb. ground chorizo sausage
1 medium onion, chopped
2 Tbsp. chili powder
2 tsp. ground cumin
2 tsp. salt
1/2 tsp. freshly ground black pepper
1/2 tsp. garlic powder
1 (8 oz.) can tomato sauce

Directions:
Directions:
Cook ground beef, chorizo, and onion in a large skillet. Add spices and salt. Mix well. Add tomato sauce and stir until well combined. Let cool.
Using the masa for tamales recipe found in the bread section of this cookbook, spread a portion of the masa on a cornhusk (which has been soaked for at least 8 hours in water) and place 1 Tbsp. of the tamale mixture in the center of the masa. Roll up and secure ends with string.
The tamales should be placed in boiling water and cooked for about 40 minutes until masa is done before serving.
You may top with salsa and sour cream just before serving, if desired.
The tamales can also be frozen for later use.

Personal Notes:
Personal Notes:
I wrap my tamales in squares of aluminum foil instead of using the traditional corn husks.
