3 lbs russet potatoes, roughly peeled and diced
3 tablespoons butter
1/2 cup onion, diced small
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
3 tablespoons flour
1/2 cup chicken broth
1/2 cup half and half
1 cup sour cream
3 green onions, sliced
1 teaspoon salt
1/2 teaspoon pepper
2 cups shredded colby jack cheese
green beans
thick sliced honey ham

Directions:
Directions:
Add potatoes to a pot of cold water. Bring to boil and cook 8 minutes. Drain and cool.
Melt butter in saucepan over medium-low heat. Add onions and cook until softened.
Stir in garlic and onion powder.
Stir in flour and cook 2-3 minutes.
Add broth and milk. Cook and stir for 5-8 minutes.
Remove from heat and stir in sour cream, green onion, salt, pepper, and cheese.
Stir in potatoes. Put your favorite pie crust in the bottom of a pie dish. Layer sliced ham on the bottom, then add green beans, and top with potatoes. Cover with additional pie crust, and poke 4 holes in the top. (may brush with egg wash if you'd like).
Bake in greased dish at 350 degrees for 1 hour.
