4 boneless chicken breasts
Juice of 1 lemon
2 tsp olive oil
1 clove of garlic, minced
1/2 tsp dried oregano
Pinch of cayenne pepper

Directions:
Directions:
Cut any visible fat from chicken & remove skin.
In shallow baking dish, arrange chicken in single layer
In small dish, combine all but chicken and mix well.
Pour over chicken and turn to coat both sides.
Let stand at room temp for 20 minutes or cover & refrigerate overnight.
On greased grill, cook chicken over hot coals for 4 to 5 minutes on each side or until meat is no longer pink inside.

Try serving with Mexican Rice and Bean Casserole
