1 lb boneless, skinless chicken breasts or thighs, cut into strips.
2½ tsp paprika, divided
Coarse salt and pepper to taste
1 tbsp olive oil
1 medium onion, chopped
14.5 oz can undrained fire-roasted dried tomatoes
1/2 cup half & half
Chopped fresh parsley for garnish


Serve over noodles

Season chicken with 1/2 tsp paprika, salt, pepper.
Heat oil in skillet on med-high.
Cook chicken 3 minutes per side.
Remove.
Stir onion in skillet 5 minutes, add tomatoes and paprika, bring to a boil.
Return chicken and juices, simmer on low for 10 minutes.
Add half & half and parsley.

Serve over hot noodles with romaine salad, whole grain rolls and carrot cake for dessert.
