4 cornish hens, about 1 lb each
1 cup undiluted frozen apple juice concentrate, thawed
1/2 tsp of cinnamon
1tbsp cornstrach
3 lemon slices

Directions:
Directions:
Wash the hens and arrange them in a small roasting pan.
In a sauce pan, combine the apple juice, cinnamon and cornstarch.
Mix until smooth.
Add the lemon slices.
Cook and stir the mixture over medium heat until the mixture thickens.
Brush this glaze over the hens.
Roast thr hens in a 375°F oven for 1 hour (or longer) until fork tender, basting with additional sauce several times during cooking.
Cut hens in half and serve.
