12 pieces of chicken tenderloins
Salt
Flour
2 tbsp butter
Olive oil
¼ cup minced shallots
3 tbsp raspberry jam (seedless)
3 tbsp red wine vinegar or balsamic
¼ cup heavy cream
Fresh raspberries

1) Heat oil and butter in large frying pan, Add shallots, cook until brown
2) Dredge chicken in flour and cook until well browned and cooked through.
3) Remove chicken and keep warm
4) Add vinegar and red wine to pan and deglaze, scraping up the brown bits in the pan. Add raspberry jam, stir in and bring to a full boil and cook for 1 minute or until slightly reduced.
5) Reduce heat, stir in the cream and let simmer for several minutes.
6) Pour the sauce over the warm chicken. Garnish with fresh raspberries
